Effect of fermented cream with partial substitution of soy protein isolate on bread quality and volatile compounds

This study aimed to improve the bread quality, especially aroma, using the fermented cream-soy protein isolate (SPI) flavor and reveal the improvement mechanisms. The cream with partially substituted SPI was fermented by lactic acid bacteria to enhance its flavor and used for bread making. The study also explored the positive effect of fermented cream on bread quality, especially the aroma formation. The bread quality was assessed by sensory evaluation, texture, and color determination, and the changes in bread dough characteristics were evaluated using a rheofermentometer and a dynamic rheometer. Furthermore, the influence of fermented cream-SPI flavor on bread volatile compounds (VOCs) was investigated using gas chromatography–mass spectrometry and principal component analysis. The results showed that the fermented cream-SPI flavor improved the texture of bread by increasing the gas production and the gluten strength of the dough. It reduced the crumb hardness from 337 ± 12 g to 171 ± 6 g and increased the specific volume from 3.51 ± 0.05 g/mL to 4.19 ± 0.06 g/mL. Moreover, the cream-SPI flavor improved the bread aroma by providing VOCs directly (acids, 2-nonanone, 2-undecanone, 2-tridecanone, and δ-dodecalactone) or precursor substances for VOC formation [esters, (E,E)-2,4-nonadienal, (E)-2-nonenal, and 1-octen-3-ol] during the bread-making process. The present study suggested that the partial substitution of SPI in cream after fermentation had great potential as a bread quality improver to enhance both the texture and aroma of bread.

Photocatalytic reduction of CO_(2) holds tremendous promise for alleviating the energy *** the progress that has been,made,there are still some challenges to overcome,such as the realization under real sunlight rather than the simulation *** this work,ultrathin Ni_(2)(OH)(PO_(4))nanotubes(NTs)prepared through hydrothermal route are applied as a novel catalyst for photocatalytic reduction of CO_(2) under real *** prepared Ni_(2)(OH)(PO_(4))NTs exhibit a 11.3 μmol·h^(-1) CO production rate with,96.1% CO ***,Ni_(2)(OH)(PO_(4))NTs have a positive impact on the facilitation of photoreduction in diluted CO_(2).Notably,when the system is performed under real sunlight,Ni_(2)(OH)(PO_(4))NTs afford an accumulated CO of ca.26.8 nmol with,96.9% CO selectivity,exceeding most previous inorganic catalysts under simulated irradiation in the *** experimental results demonstrate that the multisynergetic effects induced by surface-OH and the lattice strain serve as highly active sites for CO_(2) molecular adsorption and activation as well as electron transfer,hence enhancing photoreduction ***,this work provides experimental basis that CO_(2) photocatalysis can be put into practical use.

It is widely accepted that hydrogeochemistry of saline springs is extremely important to understand the water circulation and evolution of saline basins and to evaluate the potential of potassium-rich *** Kuqa Basin,located in the northern part of the Tarim Basin in Northwest China,is a saline basin regarded as the most potential potash-seeking ***,the origin and water circulation processes of saline springs have yet to be fully characterized in this saline *** this study,a total of 30 saline spring samples and 11 river water samples were collected from the Qiulitage Structural Belt(QSB)of the Kuqa *** were analyzed for major(K^+,Ca2^+,Na^+,Mg2^+,SO42-,Cl-and HCO3-)and trace(Sr2^+and Br-)ion concentrations,stable H-O-Sr isotopes and tritium concentrations in combination with previously published hydrogeochemical and isotopic(H-O)data in the same *** is found that the water chemical type of saline springs in the study area belonged to the Na-Cl type,and that of river water belonged to the Ca-Mg-HCO3-SO4 *** total dissolved solid(TDS)of saline springs in the QSB ranged from 117.77 to 314.92 g/L,reaching the brine *** the basis of the general chemical compositions and the characteristics of the stable H-O-Sr isotopes of saline springs,we infer that those saline springs mainly originated from precipitation following river water *** addition,we found that saline springs were not formed by evapo-concentration because it is unlikely that the high chloride concentration of saline springs resulted in evapo-concentration and high ***,we conclude that saline spring water may have experienced intense evapo-concentration before dissolving the salty minerals or after returning to the *** results show that the origin of salinity was mainly dominated by dissolving salty minerals due to the river water and/or precipitation that passed through the halite-rich ***,there are two possible origins

We investigate the properties of spatial solitons in the fractional Schr?dinger equation(FSE) with parity-time(PT)-symmetric lattice potential supported by the focusing of Kerr nonlinearity. Both one-and two-dimensional solitons can stably propagate in PT-symmetric lattices under noise perturbations. The domains of stability for both one-and two-dimensional solitons strongly depend on the gain/loss strength of the lattice. In the spatial domain, the solitons are rigidly modulated by the lattice potential for the weak diffraction in FSE systems. In the inverse space, due to the periodicity of lattices, the spectra of solitons experience sharp peaks when the values of wavenumbers are even. The transverse power flows induced by the imaginary part of the lattice are also investigated, which can preserve the internal energy balances within the solitons.

A high-resolution customized numerical model is used to analyze the water transport in the three major water passages between the Andaman Sea(AS)and the Bay of Bengal,i.e.,the Preparis Channel(PC),the Ten Degree Channel(TDC),and the Great Channel(GC),based on the daily averaged simulation results ranging from 2010 to *** analysis and Empirical Orthogonal Function(EOF)methods are employed to investigate the spatiotemporal variability of the water exchange and controlling *** results of model simulation indicate that the net average transports of the PC and GC,as well as their linear trend,are opposite to that of the *** indicates that the PC and the GC are the main inflow channels of the AS,while the TDC is the main outflow channel of the *** transport variability is most pronounced at surface levels and between 100 m and 200 m depth,likely affected by monsoons and circulation.A 182.4-d semiannual variability is consistently seen in all three channels,which is also evident in their second principal *** on sea level anomalies and EOF analysis results,this is primarily due to equatorial winds during the monsoon transition period,causing eastward movement of Kelvin waves along the AS coast,thereby affecting the spatiotemporal characteristics of the flow in the *** first EOF of the PC flow field section shows a split at 100 m deep,likely due to *** first EOF of the TDC flow field section is steady but has potent seasonal oscillations in its time ***,the first EOF of the GC flow field section indicates a stable surface inflow,probably influenced by the equatorial Indian Ocean’s eastward current.

Real-time spectroscopy based on an emerging time-stretch technique can map the spectral information of optical waves into the time domain,opening several fascinating explorations of nonlinear dynamics in mode-locked ***,the self-starting process of mode-locked lasers is quite sensitive to environmental perturbation,which causes the transient behaviors of lasers to deviate from the true buildup process of *** optimize the laser system to improve its stability,which suppresses the Q-switched lasing induced by environmental ***,therefore,demonstrate the first observation of the entire buildup process of solitons in a mode-locked laser,revealing two possible pathways to generate the temporal *** pathway includes the dynamics of raised relaxation oscillation,quasimode-locking stage,spectral beating behavior,and finally the stable single-soliton *** other pathway contains,however,an extra transient bound-state stage before the final single-pulse modelocking ***,we propose a theoretical model to predict the buildup time of solitons,which agrees well with the experimental *** findings can bring real-time insights into ultrafast fiber laser design and optimization,as well as promote the application of fiber laser.

A Geochemical Study of an REE-rich Carbonatite Dyke at Bayan Obo,Inner Mongolia,Northern China

An REE-rich carbonatite dyke was found in dulahala, close to the Bayan Obo superlarge REE-Nb-Fe mineral deposit in Inner Mongolia, northern China. The REE content in the dyke varies greatly, from 1% up to 20% (wt), which might constitute rich REE ores. Light REEs in the carbonatite are enriched and highly fractionated relative to heavy REEs and there is no Eu anomaly. The REE and trace element distribution patterns of the carbonatite are identical to those of fine-grained dolomite marble which is the host rock of the Bayan Obo REE-Nb-Fe superlarge mineral deposit. This indicates a petrogenetic linkage between the REE-rich carbonatite and the mineralizations in this region.

Nb2O5-carbon nanocomposite is synthesized through a facile one-step hydrothermal reaction from sucrose as the carbon source, and stuclled as an anode material for high-performance lithium ion battery. The structural characterizations reveal that the nanocomposite possesses a core-shell structure with a thin layer of carbon shell homogeneously coated on the Nb2O5 nanocrystals. Such a unique structure enables the composite electrode with a long cycle life by preventing the Nb2O5 from volume change and pulverization during the charge-discharge process. In addition, the carbon shell efficiently improves the rate capability. Even at a current density of 500 mA.g-1, the composite electrode still exhibits a specific capacity of ~100 mAh.g-1. These results suggest the possibility to utilize the Nb2O5-carbon core-shell composite as a high performance anode material in the practical application of lithium ion battery.
