Fermented whey （a by-product from tofu industry） has been used as a coagulant in tofu manufactures in Indonesia. This research aimed to study effects of fermented whey on coagulation efficiency and physicochemical characteristics of tofu, compared to other acid coagulants （acetic acid and glucono-delta-lactone （GDL）） and salt coagulants （calcium sulfate and natural gypsum）. A randomized block design with a single factor was used in this research. Fermented whey could be used as coagulant in tofu manufacturing. Physicochemical characteristics of tofu from fermented whey were not significantly difference compared to tofu from calcium salt and acid coagulants. Coagulation efficiencies （CF, TSIL TPR and TB~） of fermented whey are lower than that from calcium salt coagulants （calcium sulphate and natural gypsum）. Fermented whey showed no significant differences in tofu properties and parameters of coagulation process, compared to GDL and acetic acid.

Objectives:This study aimed to develop an empowerment model for burnout syndrome and quality of nursing work life(QNWL).Methods:This study adopted a mixed-method cross-sectional *** variables included structural empowerment,psychological empowerment,burnout syndrome and *** population consisted of nurses who have civil servant status in one of the regional hospitals in *** participants were recruited using multi-stage sampling measures with 134 *** were collected using questionnaires,which were then analysed using partial least squares.A focus group discussion was conducted with nurses,chief nurses and the hospital management to identify strategic issues and compile ***:Structural empowerment influenced psychological empowerment(path coefficient=0.440;t=6.222)and QNWL(path coefficient=0.345;t=4.789).Psychological empowerment influenced burnout syndrome(path coefficient=-0.371;t=4.303),and burnout syndrome influenced QNWL(path coefficient=-0.320;t=5.102).Structural empowerment increased QNWL by 39.7%.Conclusion:The development of a structural empowerment model by using the indicators of resources,support and information directly influenced the psychological empowerment of the sample of *** an indicator of meaning,psychological empowerment decreased burnout *** turn,burnout syndrome,as the indicator of personal achievement,could affect the *** empowerment directly influenced the QNWL,particularly within the workplace *** studies must be conducted to analyse the effects of empowerment,leadership styles and customer satisfaction.

Development of Optical Chemical Sensor Based on Pararosaniline in Sol-Gel Matrix for Detection of Formaldehyde in Food Samples

Optical chemical sensor based on immobilesed pararosaniline into sol-gel matrix tetraethyl orthosilicate (TEOS) is a simple tool that can be used to detect the presence of formalin (formaldehide) in food. Pararosaline in sol-gel matrix was developed when contacted with food sample that contains formalin. The optical signal was produced by changing color from purple to yellow, that can be used to detect quantitative formaldehide in sample. The results, chemo sensor optic, have characteristic, maximum wave length 576.42 nm, with linier range 0-100 ppm, linearity coefficient R2 = 0.999, limit detection (LOD) 0.504 ppm, limit of quantification (LOQ) 1.680 ppm, sensitivity 0.087, disturbed matrix selectivity 1.716 %. The optimum is operational at pH 4, and response time at 150 seconds of 2 ppm. This sensor can be used to detect formalin in food sample in a simple mode and reusable for 4 times application. E-assessment gains more popularity ever than before. This is caused by the trend that more and more institution or companies prefer to use computer system for their enrollment assessment. Some success stories about E-assessment have emerged in recent years, from selection of new students or job applicants in university or company to language assessment. One of e-assessment implementation is Entrance Test System.This application is a web-based system that examine job applicant test to qualify his or her as a new employee, using a user interface in the form of web pages. The outline for this project could be summarized as follows:1. Theory foundation and analysis of this research are MVC structure, Hibernate Framework, Struts2Framework, Java Server Pages (JSP), JQuery, CSS, HTML, mysql, and apache tomcat.2. The design of the system encloses database, architectural, interface and procedural design.3. The implementation of this project using Java2Enterprise Edition (J2EE) technology which is Java Server Pages (JSP) for the development with Hibernate framework and struts2framework, MySQL as the database server, Apache Tomcat as a. web server and Eclipse as development tool.4. This system has been carried out extensive test for making sure the quality of itself with many possible occasion from user input and behavior.The system now has been used by Dodroid company. The usage of this system is for testing job applicant who is applying job to this company.

This study has the objective to found out the temperature and raosting time of cocoa powder in order to gain color, aroma and taste favored by the panelist and has high polyphenol content. The roasting time in this research has been determined 35 min, and roasting temperature of 80, 90, 100, 110, 120, 130, 140 and 150 ℃ with vacuum and conventional system. From those temperatures ranges, we would take the three best levels according to organoleptic test result. The three selected temperatures would be tested for changing in polyphenol content during roasting process. Color alteration would be physically analyzed using color reader （PCE-RGB）. However, phenol total content was analyzed using colorimetric method of Folin-Ciocalteu. Result of this study showed that color alteration percentage （RGB model analysis） during conventional roasting is higher （43%） compared with vacuum roasting system （2%） Subsequently, organoleptic test result showed that from roasting temperatures between 80 ℃ and 150 ℃, cocoa powder favored by the panelist were those that was treated in temperature 100 ℃, 110 ℃ and 120 ℃. Other results indicated that vacuum roasting implementation could increase polyphenol content. While vacuum roasting of 60.8 cm Hg in 120 ℃ with roasting time of 25 min has obtained 10.57% total phenolic, or increasing as much as 1.22%.
