A comparative study of Fungi (yeast and moulds) and their toxic metabolites was carried out on offal and muscles of freshly fried and stored Sallah meats from rams, bulls, goats and camels slaughtered for sacrifice in Danbatta Local Government Area, Kano State, Nigeria. The objective was to determine the effects of frying and four weeks storage at ambient temperatures on the mycological loads of the fried and stored meats. A total of seventy two (72) samples of muscles and offal were collected from six different and randomly selected households that slaughtered and fried any of the four animals during that period. The samples were analyzed immediately as freshly fried, and then stored for a period of four weeks during which analyses were conducted at the second and fourth weeks. An analysis of variance (ANOVA) was used to compare between the fungal loads and the toxin contents in the stored meat. Results revealed the presence of Mucor, Rhizopus stolonifer, Aspergillus niger, Saccharomycetes, Penicilium spp and Aspergillus flavus;and that, Aspergillus flavus o.t-family:Verdana;">and

No.o.is a traditio.ally fermented milk drink co.mo.ly co.sumed in the No.thern parts o. Nigeria. It is pro.uced thro.gh the spo.taneo.s fermentatio. o. raw co. milk by Lactic Acid Bacteria (LAB), a pro.ess that co.ld result to.the co.taminatio. o. the pro.uct with such patho.enic o.ganisms as Clo.tridia spp. The aim o. this research was therefo.e to.determine the incidence o. Clo.tridia species in thirty-two.(32) ready-to.drink no.o.samples co.lected directly fro. a number o. Fulani vendo.s in rando.ly selected lo.atio.s within the Federal Capital Territo.y (FCT), Abuja, Nigeria. Iso.ated o.ganisms were further subjected to.so.e mo.pho.o.ical and bio.hemical characterizatio.s using standard micro.io.o.ical pro.edures. The results o.tained indicate that fo.rteen (14) iso.ates were putatively identified to.be Clo.tridium sp., o.t o. which five (5) iso.ates were co.firmed to.be Clo.tridium spo.o.ens by a BLAST analysis o. their respective 16SrRNA nucleo.ide sequence. It was co.cluded that, the detectio. o. these patho.enic strains in frequently co.sumed pro.uct like no.o.co.ld po.e a public health risk and pro.ctive measures to.prevent an o.tbreak o. fo.d bo.ne illness fro. no.o.co.sumptio., were reco.mended.
