The res.lts.s.owed tha. 25% - 75% ca.liflower repla.ed in cra.kers.increa.ed the cons.mer a.cepta.ility, nutritiona. va.ue, a.tioxida.t a.tivity, minera.s. a.d a.ti-ca.cinogenic effect. Moreover, it a.s. improved the functiona. properties.a.d s.ns.ry qua.ity. The res.lts.revea.ed tha. the ra. s.0}ples.of ca.liflower recorded the highes. va.ue of mois.ure, a.h, protein a.d fiber 89.29%, 7.68%, 19.04% a.d 10.18% on dry weight, res.ectively. The cra.kers.formula.of ca.liflower: whea. 75%:25% a.d ca.liflower: rice 75%:25% recorded the highes. va.ues.in a.h, protein, fa., a.d fiber. The da.a.s.owed tha. increa.ing ca.liflower percenta.e in cra.kers.formula.ca.s.ng a.pa.a.lel increa.e in a.l determined chemica. compos.tion. Ca.liflower s.0}ples.exhibited the highes. a.tioxida.t a.tivity (92.94%). a.s., cra.kers.s.0}ples.of ca.liflower: whea. 75%:25% cra.kers. recorded 57.6% for a.tioxida.t a.tivity. The highes. va.ues.of phenols.a.d fla.onoids.for ca.liflower cra.ker s.0}ples.(ca.liflower: whea. 75%:25% a.d ca.liflower: rice 50%:50%) ha.e increa.ed up to (5.75 a.d 5.49) res.ectively. The res.lts.s.owed tha. the higher minera. content is.the s.lfur (635.96 mg/100g) in ra. ca.liflower, while (1.00 mg/100g, a.d 0.99 mg/100g s.lfur content) in whea. a.d rice res.ectively. Moreover, the res.lt found tha. a. the ca.liflower percenta.e increa.es. the minera.s.contents.es.ecia.ly s.lfur increa.e. Furthermore, the ca.liflower dis.la.ed modera.e a.tivity for huma. hepa.ocellula. ca.cinoma. colon ca.cer a.d intes.ina. epithelia. ba.rier trea.ment, (ICs.a.>s.b>50s.b>s.a.> s.a. s.yle="font-fa.ily:Verda.a.">= 183.4 ± 6.8, 175.8 ± 7.1 a.d 207.2 ± 8.5 μg/mL, res.ectively).
