Study on the influence of food emulsion components on its lubrication characteristics and smooth perception

Due to the increasing risk of obesity and cardiovascular diseases caused by high-fat diets,low-fat foods have become a priority demand for consumers’***,the smoothness perception and scientific assessment methods of the existing low-fat foods should be *** this study,three food emulsions were prepared,and their lubrication characteristics,sensory evaluation of smoothness,and electroencephalogram(EEG)signals were assessed to preliminarily investigate the effects of food emulsion components on their above *** results showed that fat substitute(FSU)and fat could significantly reduce coefficient of friction(CoF)of the food emulsions,with average CoF reduced by 28%and 63%compared to the original food *** addition,fat-enriched food emulsions continued to exhibit excellent lubrication characteristics after adding artificial saliva,with an average CoF reduced by 31.1.compared to that of the food emulsions without artificial *** FSU and fat improved the smoothness of food emulsions,and the lubricating properties of fat were more pronounced,with fat-enriched food emulsion which could provide a substantial improvement in smoothness compared to the fat-free food *** of subjects’EEG signals revealed that food emulsion with lower CoF and higher smoothness triggered higher P3 amplitudes and longer *** findings provide better insights into the scientific evaluation of food texture and the development of low-fat foods.

When the source-receiver depth relationship is unknown,using the time delay differences for distance and depth estimation may result in a pseudo *** address the issue,a method for directly estimating distance and depth using four time delay differences has been *** method analyzes the relationship of four time delay differences between multipath,by utilizing the difference in the same time delay difference between the pseudo source and the true position,a fuzzy plane is constructed for *** pseudo source can be eliminated without determining the source-receiver depth relationship,which can be achieved on a single *** effectiveness of the method is verified through simulation experiments and error *** sea experiment shows that the method successfully achieves distance and depth estimation of targets ranging from 1..0 km to 1..5 km on two single hydrophones at different depths,with root mean square errors of less than 1.1.km and 54 m,respectively.

Photocatalytic carbon dioxide(CO_(2))to carbon monoxide(CO)offers a promising way for both alleviating the greenhouse effect and meeting the industrial ***,we constructed a Co single-atom catalyst with intentional low-coordination environment design on porous ZnO(denoted as Co1.ZnO).Impressively,Co1.ZnO exhibited a remarkable activity with a CO yield rate of 22.25 mmol·g^(-1.·h^(-1. and a selectivity of 80.2%for CO_(2) photoreduction reactions under visible *** incorporation of single Co atoms provided an additional photo-generated electron transfer channel,which suppressed the carrier recombination of ***,the unsaturated Co active sites were capable to adsorb CO_(2) molecule spontaneously,thus facilitating the activation of CO_(2) molecule during CO_(2) reduction course.

Low-molecular-weight(LMW)compounds are ubiquitous in living organisms and play essential roles in biological *** direct analysis of LMW compounds in biological tissues by matrix-assisted laser desorption/ionization mass spectrometry imaging(MALDI-MSI)could provide a more comprehensive understanding of their essential ***,we evaluated 4-nitrocatechol(4-NC)as a novel positive-ion matrix for enhancing in situ detection and imaging of LMW compounds from the rat liver,brain,and germinating Chinese-yew seed by *** results showed that the 4-NC possessed remarkable features,including strong ultraviolet absorption,uniform matrix crystal,excellent chemical stability,and fewer matrix-related background *** use of 4-NC led to the successful detection of 232,21.,and1.3 LMW compounds from the three abovementioned tissue sections,***,the use of 4-NC improved the imaging quality of LMW compounds in tissue sections through MALDI-MSI and has the potential as a matrix for MALDI tissue imaging of LMW compounds.
