The Occurrence and Role of Allantoin (5-ureidohydantoin) in Rice Grains

摘 要:Allantoin (5-ureidohydantoin) was found in grains of 15 Chinese rice *** profiles in these rice grains differed significantly among cultivars and *** always had the highest allantoin content,followed by brown rice and milled *** contained the lowest allantoin *** Japonica bran contained allantoin at high contents of over 120 μg/g,while indica bran rarely exceed 100 μg/*** was a positive relationship between grain allantoin levels and seedlings survival in paddy ***,exogenous allantoin increased soluble sugar and free praline contents,and decreased malondialdehyde (MDA) content in rice ***,allantoin did not show any antioxidant activity in a concentration-dependent manner through the free-radical scavenging capacity,reducing power,linoleic acid peroxidation inhibition and chelating *** results suggest that allantoin in rice grains may play a role in participating rice seeds resistant to low temperature stress rather than serving as a source of dietary bio-functional phytochemical.
